摘要 探讨了海洋贝类摄入对人体重金属镉沉积的影响,并对绿藻及硒、锌干预性清排镉的机制进行了归纳与分析。海洋贝类有高的富集镉的能力,其富集能力大于鱼类和甲壳类,仅通过食用贝类人体每天摄入镉的量约为5.2μg。镉对人体组织和器官有多方面毒害,而绿藻独特的细胞壁组成和结构以及硒、锌拮抗镉毒性特性,对镉中毒的防护与干预性清排具有积极作用。 The effect of marine shellfish intake on the cadmium sedimentation in human body was discussed and the mechanism of intervention cadmium discharge by green algae, selenium and zinc was summarized and analyzed. The enrichment ability of cadmium in marine shellfish was higher than those in fish and crustacean and the intake of cadmium was estimated to be 5.2μg per day only from marine shellfishes. The unique component and structure of cell walls in green algae and the antagonistic behavior of selenium and zinc on cadmium toxicity are effective in reducing hurts brought by cadmium. Theoretic and practical directions about defence protection and discharge on cadmium have been provided.
