摘要
采用剖析研究与比较研究相结合的思路方法,探讨、论证了玉米蛋白质、玉米胚蛋白质、玉米胚乳蛋白质及玉米蛋白质中几种特性蛋白的必需氨基酸组成结构比例的科学性与营养价值优劣势。通过研究发现,只要就玉米蛋白质的五大利用特点加以科学利用,就一定能够最大限度地发挥玉米营养价值优势,并使玉米蛋白质的劣势转化为利用优势。
By analysis and comparison the author approaches and expounds and proves the scientific structure proportion of corn protein, corn embryo protein, corn endosperm protein and essential aminoacid of several kinds of Characteritic protein on the one hand and their advantages and disadvantages in their trophic value on the other.
