由桷皮酮磺化反应制得槲皮酮—5′—磺酸盐,作为光稳定剂对花青苷色素具有保护作用,同时还可起到防腐效果,加入此光稳定剂,可使木都柿色素在日光下放置45天,色素降解率只有17.7%。
The quercetin -5′-sulphonate can be prepared by quercetin sulphotication. When it was used as photoprotective agent in Dushi natural pigment,the pigment decomposed only 177% when exposured to sunlight for 45 days.
