The quercetin sulphonate used as a photoprotective agent of Dushi pigment

由桷皮酮磺化反应制得槲皮酮—５′—磺酸盐，作为光稳定剂对花青苷色素具有保护作用，同时还可起到防腐效果，加入此光稳定剂，可使木都柿色素在日光下放置４５天，色素降解率只有１７．７％。

The quercetin -5′-sulphonate can be prepared by quercetin sulphotication. When it was used as photoprotective agent in Dushi natural pigment,the pigment decomposed only 177% when exposured to sunlight for 45 days.
