摘要
应用障碍技术或综合保藏方法可生产出稳定、安全、风味好、营养价值高,且勿需冷藏便可在常温下储藏的食品。本文综述了综合保藏方法的原理及其在食品加工中的应用,包括:(1)概述(2)耐藏食品———SSP(3)半干食品———IMF(4)微生物的体内平衡(5)综合保藏方法在发展中国家的应用(6)展望。
Hurdle technology is very useful for producing foods that are stable and safe even without refrigeration,and high in sensory and nutritive properties due to the gentle processes applied.Here reviewed are the concept,priciples,mechanism and applications of the hurdle technology (combined methods).Several topics are discussed:(1)Brief introduction,(2)Shelf stable prtoductsSSP,(3)Intermediate moisture foodsIMF,(4)Homeostasis of microorganisms,(5)Applications of hurdle technology in less developed countries,and(6)Future potential.
