目的介绍天然色素的种类、提取分离方法及应用现状,为进一步开发和利用天然色素提供理论依据。方法查阅相关文献,对天然色素的种类、提取分离方法及其应用等方面进行归纳分析。结果天然色素种类繁多,其提取方法有溶剂提取法、超临界流体萃取法、超声波提取法、微波提取法、酶法、空气爆破法,分离方法有溶液分离法、膜分离法、柱层析法、薄层色谱法、高效液相色谱法、离心液相色谱法、高速逆流色谱法,主要应用于食品、化妆品、药品和纺织品着色等方面。结论天然色素自身具有营养价值,毒副作用小,可取代合成色素应用于食品和化妆品的着色,并具有一定药理作用,进一步开发利用的意义深远。

Objective To provide the theoretical basis for the exploitation and utilization of natural pigments through understanding the category, extraction and separation methods, application of natural pigments. Methods To summary and analyze the category, extraction and separation methods, the application of natural pigments by consulting the documents. Results Natural pigments were a great varieties. The methods of extraction and separation were solvent extraction, supercritical fluid extraction, ultrasonic wave method, enzymic method, air blasting method and solution separation, membrane separation, column chromatography, thin-layer chromatography, high performance liquid chro- matogram, centrifugal liquid chromatography, high speed counter current chromatogram respectively. Natural pigments were applied in the foodstuff, cosmetics and textile. Conclusion Natural pigments can replace synthetical pigments due to their nutritive value and little side effects. They possess some important pharmaeological actions and far-reaching exploitation and application significance.
