摘要
嗜酸乳杆菌在MRS培养基中培养得到的细菌素经30、60、90、121℃处理20min后,活性几乎不变,对以金黄色葡萄球菌为代表的革兰阳性菌、大肠埃希菌为代表的革兰阴性菌有明显的抑制作用,Tricine-SDS-PAGE和不同pH值抑菌实验测定结果证明,嗜酸乳杆菌细菌素是一组低分子量,并在pH2~4时有抑菌作用的活性物质。
Activity of a bacteriocin produced by Lactobacillus acidophilas obtained in MRS medium was nearly unchanged after treated for 20 min. at 30, 60, 90, and 121℃. The bacteriocin has apparent inhibition against Staphylococcus aureus a representative of Gram-positive bacteria, and E. coli a representative of Gram-negative bacteria. The results of Trieine-SDS-PAGE showed that the bacteriocin was a group of low molecular substance, it was an active substance having inhibition effects even under pH 2 - 4.
