摘要
肉品掺假的鉴别是影响食品安全的一个重要问题。采用抗猪IgG-Fc单克隆抗体作为捕获抗体,以猪IgG作为检测标志物,建立了检测猪肉成分的夹心ELISA方法。单抗最佳包被浓度为1μg/mL,酶标抗体最佳浓度为1∶5 000稀释。结果混合物中猪肉掺杂仅为1%时,有明显反应。该方法具有快速、简便、灵敏度高、特异性强等优点。
Identification of adulterated meat is one of the key food safety concern.In the experiment,a sandwich ELISA for detecting the pork ingredients in the raw meat mixture were developed using pig IgG as detecting indicator and anti-pig IgG-Fc monoclonal antibody as capture antibody.The optimum coating concentration of monoclonal antibody was 1 μg/mL,and the optimum concentration of HRP-labeled goat anti-pig IgG antibody was 1∶5 000 dilution.The result showed strong positive reaction on mixture containing only one percent of pork.The method has such advantages as fast,convenient,sensitive and specific.
