深圳市劳务工食堂管理及卫生现状分析

Analysis of the Management and Sanitation Situation of Worker Dining Halls in Shenzhen City

摘要 目的了解深圳市劳务工食堂的管理及卫生状况,为加强劳务工食堂的监管提供科学依据。方法采用随机抽样的方法,以问卷调查方式调查412家劳务工食堂,并对其管理及卫生状况进行描述性分析。结果劳务工食堂平均拥有就餐座位291个,平均面积为366.4 m2,平均就餐人数259人,食堂工作人员平均8人;食堂供应食物的品种较为丰富,食物价格不高,早、中、晚餐分别为1.5元、3.4元、3.3元;97.8%的食堂具有卫生许可证,91.2%实行量化分级管理;从业人员98.7%有健康证,97.3%有培训合格证;60.0%的食堂环境卫生状况整洁,87.3%布局合理,94.9%拥有消毒设备,90%以上的食堂有防蝇、防尘、防鼠设备,94.4%原料购入有索证。结论经整顿后劳务工食堂整体卫生状况有所改善,但管理状况不容乐观,政府还应出台相应的扶持政策。 Objectives To understand the management and sanitation situation of worker dining halls in Shenzhen City,in order to strengthen their oversight and offer a scientific basis for their supervision.Methods We used a random sampling method to distribute questionnaires to 412 worker dining halls,and undertook a descriptive analysis of their management and sanitation situations.Results On average,worker dining halls have 291 seats,are an average of 366.4 m2,serve an average of 259 people,and have an average of 8 employees.The dining hall offerings are relatively plentiful,and the price is not high.The price for breakfast,lunch,and dinner was 1.5 Yuan,3.4 Yuan and 3.3 Yuan respectively.Of the dining halls surveyed,97.8% had health permits,and 91.2% had instituted quantified classes of management.Of the dining hall workers,98.7% had health certificates,and 97.3% had training certificates.Of the dining halls surveyed,60.0% had clean sanitary environments,87.3% had rational arrangements,94.9% had disinfection facilities,more than 90% had facilities for preventing contamination from insects,dust,and mice,and 94.4% had a quality assurance certificate for the raw materials they bought.Conclusions Following reorganization,the sanitation state of worker dining halls has had some improvement,but the management situation is not very optimistic.The government should make some supportive policies in this area.
