摘要
根据食品罐藏原理,研究糖水山竹罐头的生产工艺,主要介绍以成熟山竹为原料,制成营养丰富、风味独特、质量达到标准的山竹罐头的加工工艺。
According to the principles of processing cans,the technological conditions of processing canned Garcinia mangostana L.in sugar were studied.The paper introduces the technology of processing Garcinia mangostana L.canning with special flavour and rich in nutrition by using ripe Garcinia mangostana L.fruit as raw material,make products meet the require ments of the quality.
