摘要
高档牛肉只占牛肉总重的10%左右,但其经济价值却占到整个牛的近50%。通过对高档牛肉冷却配套技术的研究与生产实践,进一步完善了我国高档牛肉生产的冷却配套工艺,提高了高档牛肉的品质,减少了外汇支出,也有力地促进了肉牛产业化的健康发展。
Top grade beef accounts for only 10% or so of total beef, but its economic value nearly 50% of the whole cattle. Research and application of techniques for cooling top grade beef has led to a further improvement in China' s techniques for cooling top grade beef,enhancement in the quality of top grade beef, and reduction in foreign exchange expenditures, greatly promoting the healthy growth of beef cattle industrialization.
