摘要
对食品预测微生物学的发展历史、研究现状和发展趋势进行了综述。列举了食品预测微生物学的一级模型、二级模型和三级模型形式,并对食品预测微生物学将来的发展方向进行了展望。
The history, progress and future of predictive food microbiology were reviewed in this paper. Different predictive models for food microbiology were demonstrated as primary, secondary and tertiary models, respectively. Finally, the future research in this domain was advanced in predictive food microbiology.
