摘要 小麦麸皮是小麦加工中的副产物,含具有生理活性的膳食纤维、低聚糖和酶等成分。大豆皮是大豆制油厂的加工副产品,其富含纤维素、半纤维素和果胶类物质,是人类膳食纤维的理想来源,同时也可从中提取过氧化物酶;大豆皮经高温处理后,得到的豆皮碳可作为油脂精炼过程中应用价值较高的吸附剂等。综述了小麦麸皮和大豆皮的用途,以及提取其内容物的方法。 Wheat bran is the by-product of wheat processing; it contains dietary fiber, ohgosaccharide, and enzyme which have physiological activity. Soybean hull is the by-product of soybean oil mill, it is an ideal source of human dietary fiber because it rich in cellulose, hemicelluloses, and pectic substance, and meanwhile, we can also extract peroxidase form it; Besides, Soybean hull treated by high temperature can produce soybean-hull carbon, which can be used as a higher value of the adsorbent in oil refining process. The development and utilization of Wheat bran and Soybean hull have a very wide development prospect in the food industry.
