摘要
为了解鲜河鱼肌肉制品的食用安全性,对472名志愿食用者进行观察,结果未发现有不良反应者。提示在完善河鱼加工工艺和毒素监测技术的基础上,可以做到安全食用鲜河鱼。
On study of the safety of the flesh products of fresh puffer fish, 472 volunteers were observed after they had eaten the products and no toxic symptoms were found. It pointed out the puffer fish can be take safely after being processed properly and detecting of the tetrodotoxin.
