摘要
本文以测定食品中亚硫酸盐的国标(GB5009.34—85)方法为基础,通过试验提出了羟甲基戊二醛—盐酸副玫瑰苯胺—SO32-新显色体系,并对其显色时间、显色温度、羟甲基戊二醛用量、显色剂盐酸副玫瑰苯胺用量及显色体系的稳定性等因素进行了考察,该显色体系的最大吸收波长为581nm,本法SO2浓度在0~0.95gm/ml范围内服从比耳定律。本法应用于部分食品中SO32-的测定,结果与国标方法基本一致。另外,采用上述显色体系制成的亚硫酸盐试纸也已证明具有实用价值。
A new colour reaction on the national standard method (GB5009.34-85) base of sulfite determination in foods was reported in this paper.The colour reaction time,temperature,hydroxymethyl glutaraldehyde and pararosaniline hydrochlorlde addition quantities were investigated,and the system stability was examined.The colour complex has a maximum absorption at 581nm and its apparent molar absorptivity is 4.71×104 L·mol-1·cm-1·Beer's law is obeyed in the range of 0 ̄ 0.95μg·ml-1 SO2 concentration. The new spectrophoto metric method has been applied to determining sulfite in some foods and results are basically identical with national standard method.Besides all this,the application of test paper for the rapid identification of sulfite has been proved preliminary.
