摘要 本文介绍用装备有OBD—1毛细管柱及FID检测器的气相色谱仪测定了燕窝及可能的掺假物,如鱼鳔、猪庳、银耳、琼脂等的氨基酸组成。根据氨基酸的总量、组成及缬氨酸/丙氨酸之间比例的差别,提出了燕窝的鉴定和燕窝制品中燕窝概略定量的可能方法。 A method for the determination of amino acids in edible bird nest and materials which may be used as adulterant such as fried pig skin, gas bladder, white fungus, and agar by capillary GC with FID was described. On the basis of reseaches of the content and composition of amino acids, the ratio variation curves of valine/alnine in typical adulterations of edible bird nest were drawn, and the scientific bases for the identification and semi-quantitation of edible bird nest were provided.
