摘要
本文报道了一种应用细管气相色谱法测定常用食用植物油中脂肪酸的方法。该方法具有分辨率高、灵敏度高和操作简单等特点。它能测定全部指肪酸成份,适用于所有食用油脂的分析。文中给出了8种常用食物油脂肪酸甲酯的分析数据,并通过对典型掺伪的研究,提出了鉴定这些掺伪的依据,绘制了掺伪油中脂肪酸含量变化的曲线。
A method for determining fatty acids in edible vegetable oils by capillary GC is described. Results of major and trace comstituents of FAMEs in eight kinds of oils are repoted. On the basis of researches on typical adulterations of edible oils, a scientific basis for identifying these adulterate oils are drawn, The method considered has advantages of high resolution, high sensitivity and simple operation process and can be applied to analyse all kind of fats and oils.
