场解吸质谱分析天然油脂的研究

摘要 本文利用场解吸电离质谱(FDMS)直接测定天然油脂中混合脂肪酸甘油酯的分子量,为甘油三酸酯的组成提供了最基础的数据,并且通过数据分析的方法计算出甘油三酸酯中不同碳数脂肪酸的分布,不同碳数脂肪酸的比例和平均双键数。但是这一方法不能提供各种脂肪酸在甘油酯中的具体位置。 Field desorption mass spectrometry has been used to determine the molecular weight of complex triglycerides in natural oils and fats. This method provides the basic information about components of the oils and fats.The distribution and content of fat acids which are made of different number on carbon atoms and the number of average double bonds in the triglycerides can be calculated by means of data processing. But this method can not provide the position of these fat acids in triglycerides,
