测定了两个黑米样品的氨基酸含量,其中8种人体必需氨基酸占氨基酸总量分别为41.89%和42.21%;化学评分(CS)分别为55.60和56.88;必需氨基酸指数(EAAI)分别为95和94。黑米中8种必需氨基酸的含量均高于一般稻米。
The analysis results show that two samples of dark rice contain eight essential amino acids, amounting to 42.21% and 41.89% of the total amino acid content, respectively. The chemical scores are 58.88 and 55.60, respectively. The essential amino acid indexes are 94 and 95, respectively. The eight essential amino acids in dark rice are in general higher than those in common rices.
