乳酸细菌在葡萄酒生产中十分重要,它们可以产生苹果酸乳酸发酵,也可引起乳酸酸败。本文阐述了葡萄酒中乳酸细菌的来源,生长循环以及存在于葡萄酒生产中的主要乳酸菌,并列举由乳酸细菌引起的各种病害症状及防治方法。
Lactic bacteria are important in the process of winemaking.Theycan induce both MLF and Lactic spoilage.The origin of lactic bacteria,their growth cycles during vinification and the principal species found in vinification are viewed.The major diseases caused by lactic batet —ria and the measurements of controlling lactic spoilage are also given.
