摘要
从野艾嫩枝叶中提制的色素,主要成分为叶绿素a和叶绿素b。野艾色素耐热性好。金属A1^(3+)和Ca^(2+)对野艾色素有不良影响,在实际生产中不能使用铝制品,不能与钙接触。低浓度的Fe^(3+)、Cu^(2+)和Zn^(2+)以及高浓度的Sn^(2+)对色素能起增色作用。
Major compositions of greenchroma which is extracted from the tender branches and the leaves of Artemisia duaia Wall. are chlorophyll a and chlorophyll b, and the heat resistant of pigment is excellent. Reaction of metal cations Fe3+, Cu2+, Zn2+, A13+, Ca2+, and Sn2+ to the greenchroma indicate that there is a bad reaction of A13+ and Ca2+ to the pigment. Therefore, utensils made of aluminum shouldn't be used and calcium shouldn't be came into contact with in practical production. Fe3+, Cu2+, Zn2+ that are low concentration and Sn2+ that is high concentration can increase the pigment color of Artemisia dubia Wall.
