食用菌富硒试验研究

EXPERIMENTAL STUDY ON ENRICHMENT WITH SELENIUM IN MUSHROOMS

摘要 人工栽培平菇和香菇原含硒量分别为0.254和0.527μg/g(干重),含水量约为85%,通过制种过程加入不同浓度硒添加剂,可使硒含量递增,最高浓度可达34.980和113.00μg/g(干重),即提高137和214倍。作为老年人保健食品,根据摄入量、硒毒性和适口性,提出最适富硒量为1μg/g(鲜重),相当6.67μg/g(干重)。 The Se contents of two cultivated mushroom species (Pleurotus ostratus and Lentinus edodes) were 0.254 and 0.527ug/g (dried) respectively. Enrichment of Se for both species was carried out successfully by adding different amo- unt of selenium mixture into the culture media during cultivation. The final concentration might reach as high 34.980 and 113.00ug/s (dried) respecti- vely, which were 137 or 214 times the original Se content. As a kind of health care food for the elderly, the following 3 aspects, namely, the amount of intake, the potential toxicity and the taste after enrich- ment should be considered. Authors suggested that the most disirable Se con- tent after enrichment should be around 1 μg/g(fresh), equivalent to 6.67 μg/g (dried).
