摘要
β-淀粉酶是一种外切糖化酶,植物中的β-淀粉酶活力高,因此在啤酒等工业中都使用由植物中获得的β-淀粉酶。文中从提取、纯化、活力测定、鉴定、酶学性质、决定最适酸度和温度以及应用和研究前景等方面综述了β-淀粉酶的研究进展。
β-amylase is a kind of exonclease. Beer industry and others extract β-amylase from plants as its high activity in plants. In this paper, the research development of β-amylase was summarized in the aspects of extraction, purification, determination of enzyme activity, appraisal, enzymatic properities, optimal acidity and temperature, application and study prospect.
