不同品种大麦发芽过程中硫-甲基蛋氨酸及相关指标的跟踪检测 被引量:1

Detection of S-methyl methionin and relative indexes during the germination of different barleys

摘要 采用氢火焰离子化检测器(FID)、顶空结合毛细管柱气相色谱对不同品种大麦的硫-甲基蛋氨酸(SMM)进行跟踪测定,同时对发芽期间SMM含量差异较大的品种的蛋白酶活力及相关指标(浸出率、α-氨基酸态氮、可溶性氮和总氮)进行跟踪检测。实验结果表明,发芽过程中,国产大麦SMM含量较高,Cervoise大麦SMM含量较低,国产大麦的蛋白酶活力、可溶性氮和总氮的含量高于Cervoise大麦,而浸出率和α-氨基酸态氮的含量则低于Cervoise大麦。 In the experiment, the hydrogen flame ionization detector (FID) and headspace capillary gas chromatography were used to detect S-methyl methionin (SMM) content during the germination of different barleys. Meanwhile, the protease activity and relative indexes (leaching rate, α-amino nitrogen, soluble nitrogen and total nitrogen) of the barleys whose SMM ranged widely during germination were also detected during the germination. The results showed that the SMM content of indigenous barley was higher than that of Cervoise barley during germination. The protease activity, soluble nitrogen and total nitrogen content of indigenous barley were higher than those of Cervoise barley, but the leaching rate and α-amino nitrogen content were lower than those of Cervoise barley.
