摘要
综述了近年来火龙果果实、花及茎的开发应用研究状况。着重介绍了火龙果果实、花及茎的营养成分、保健价值及火龙果果汁、果酒、果脯、果醋、酸奶、果酱、罐头、冰淇淋、花保健饮料和干花的加工工艺,并对火龙果的开发应用前景进行了展望。
Summarized the application research status of fruit, flower and stem of Hylocereus undatus.Emphatically introduced the nutritional components,health care value of fruit,flower and stem of Hylocereus undatus,and the processing technologies on fruit juice,fruit wine,preserved fruit,fruit vinegar,acidophilus milk,fruit jam,can,ice cream,health drink and dry flower of Hylocereus undatus,and viewed the development and application prospect of Hylocereus undatus.
