摘要 纳米营养物的制备是纳米技术在食品工业中应用的研究热点之一。超临界抗溶剂技术是一种制备纳米材料的绿色新工艺,在提高食品营养物稳定性和生物利用度的纳米营养物制备方面具有重要应用前景。本文介绍了超临界抗溶剂技术的基本原理、特点、分类及其在纳米营养物制备中的应用。 The production of nano-nutrients is a hot application of nanotechnology in today' s food industry. Supercritical anti-solvent (SAS) process is a new and green technology to prepare nano-materials, and has a broad application prospect in promoting the stability and bioavailability of nutrients. This review mainly introduced the principle, characteristics and classi- fication of SAS technology and its application in production of nano-nutrients.
