摘要 小麦的淀粉含量是判别小麦品种类别和影响出粉率及面粉用途的重要指标之一,对面条等食品的食用品质也有重要影响。本研究针对生产上小麦淀粉含量变化很大的问题,选用山东省区试的11个优质小麦品种(系)为材料,在9个不同的试点上,进行淀粉含量分析试验。结果表明,不同品种和地点间淀粉含量变化较显著。利用主效可加互作可乘模型(AMMI)对淀粉含量进行稳定性分析,不同品种与不同试点的交互作用不同,每个品种(系)对试点都有其特殊的适应性。因此,在优质专用小麦产业化种植时,针对淀粉含量,既要选准适宜的品种又要注意适宜的种植区域。 Starch content is an important index for classifying wheat, and it often affects flour yields and is one of the most appropriate standard for end use in wheat cultivars. This research was directed at the problem of large fluctuations in starch content that occurs during commercial wheat production. The variations in starch content and its consistency across locations were analyzed using 11 principal high - quality wheat cuhivars (varieties) from China's Shandong Province, which were grown at nine different locations. The results indicated that variation for starch content across different varieties, locations, and years. Additive main effects and muhiplicative interaction (AMMI) analysis indicated that there were significant interactions in starch content among varieties. The interactions between variety and locations differ greatly; however, each cuhivar (variety) apparently has a specific adaptability to growth location. Therefore, we should select both proper cuhivars and their most suitable growth locations should be selected to meet the requirements for Starch content.
