微波法快速测定酱油中可溶性无盐固形物含量的方法研究 被引量:3

摘要 目的研制一种简便、快速、准确测定酱油中可溶性无盐固形物的检验方法。方法基于微波法测定食品中水分/固形物或挥发物的原理,优化了仪器的加热功率、时间、加热温度及取样量等适宜条件,建立了微波法测定酱油中可溶性无盐固形物含量的快速分析方法。结果在仪器设置加热功率50%、时间15s、温度105℃、取样量0.5ml条件下,测定结果与国标法(重量法)比较相一致,经配对t检验,P>0.05,差异无统计学意义。同一样品重复测量6次,相对标准偏差(RSD)为1.06%~1.45%。结论用微波法测定酱油中可溶性无盐固形物含量,操作简便,快速、准确、省时,分析时间仅需2~3min,适宜日常样品的快速监测。 Objective To develop a simple, rapid and accurate method for determining the contents of saltless soluble solid material in soy sauce. Method Certain conditions of instruments including temperature, time, power and sampling amount were optimized according to the principle of determining moisture contenffsolid material or volatile matter in foods based on microwave method. Results The conditions of instruments indicated that heating power was 50% and the sampling amount was 0.5 ml for 15 s at 105 ℃ and the results showed no significant difference (P 〉 0.05) in comparison with national standard method. The relative standard deviation was 1.06% - 1.45 % ( n = 6). Conclusion The analyzing time need only 2 - 3 min for one sample. The improved method was simple, rapid, accurate and could determine the contents of saltless soluble solid material in soy sauce.
