摘要
重点开展蛋清蛋白水解物体内抗氧化作用的实验研究,对比分析了2种蛋清蛋白水解物对受试30d小鼠的皮肤羟脯氨酸含量(HYP)、血清微量丙二醛(MDA)含量、血清谷胱甘肽过氧化物酶(GSH-PX)活性等指标的影响情况。结果表明:与灌胃蒸馏水的空白对照组比,蛋清蛋白水解物Ⅰ即5%浓度蛋清高F值寡肽能够提高受试小鼠血清中GAH-PX活性(p>0.05);能够显著提高受试小鼠皮肤中羟脯氨酸含量(p<0.01);能够显著降低(p<0.01)受试小鼠血清中MDA含量;能够显著提高受试小鼠免疫器官——脾脏的脏器系数(p<0.05),具有一定的抗氧化功效。
Our aim was to study the antioxidant activity of egg white protein hydrolysate in vivo. The activity of glutathione peroxidase (GSH-PX), the content of malondialdehyde (MDA) in mice blood serum and the content of hydroxyproline (HYP) in skin of mice were determined to analysis the difference of antioxidant activity between two kinds of egg white protein hydrolysates. The results showed that egg white protein hydrolysate Ⅰ which was 5% concentration of high Fisher ratio oligopeptide derived from egg white protein could promote the activity of GSH- PX(p〉0.05), increase the content of hydroxyproline (HYP), decrease the content of malondialdehyde (MDA) in mice blood serum significantly(p〈0.01)and increase the organ coefficient of spleen(p〈0.05)which is the immune organ compared to the control group which mean it possessed the antioxidant activity.
