摘要
使用海藻酸钠固定纤维素酶,对其提取番茄红素的工艺进行了研究。结果表明:使用固定化纤维素酶可以提高番茄红素的提取率,对固定化酶处理番茄红浆的条件进行优化。得到优化的工艺条件为:酶量1%(质量分数),处理时间1 h,处理温度45℃,pH值最适范围为5~6。
