摘要
根据香兰素亚硝基化合物所产生的极谱波建立了一种灵敏、简便、快速的测定食品中香兰素的极谱分析新方法。线性范围0.015~1.8μg/mL,检出限为6.7×10-3μg/mL。研究了极谱波性质及电极反应机理,测定了麦片、蜜饯中香兰素含量。
Vanillin can reacted with sodium nitrite, and the nitrosation product can reduced with a well sensitive polarographic wave at -0.70V (vs. SCE), and the derivative wave height is proportional to the concentration of vanillin in a range of 0.015~1.8μg/mL, the detect limit is 6.7×10 -3 μg/mL. The polarographic behavior of the wave has been studied. The method is sensitive, rapid and simple, and it has been applied to determination of vanillin in food with satisfied results.
