菠菜的营养及其草酸含量的调控方法分析 被引量:8

摘要 菠菜因含有多种丰富的营养素而成为广受欢迎的餐桌蔬菜,是我国重要的冬季蔬菜和出口蔬菜,也是一种重要的经济作物。但菠菜中草酸含量偏高,处理不当对人体营养具有很大危害。如何在菠菜各个加工环节调控草酸含量成为业界关注的焦点。通过详细调研,本文对菠菜的营养成分、药用价值以及种植和烹调过程中降低菠菜草酸含量的对策进行了全面分析。
