摘要
目的了解广州市畜禽肉品中激素、抗生素蓄积的主要组织器官和残留水平,评估每人每日膳食中的摄入量。方法采用高效液相色谱对样品检测土霉素、四环素、金霉素、氯霉素和己烯雌酚、丙酸睾酮的残留量。结果激素残留检出率为28.15%,抗生素残留检出率为43.91%;激素在畜禽体内的残留部位没有轻重之分,而抗生素在内脏器官的残留明显高于肌肉,激素和抗生素在猪肉品(包括内脏)和禽肉品的残留差异无统计学意义;广州市居民膳食中己烯雌酚、四环素、土霉素和氯霉素的最高摄入量是每日最低治疗量的0.146%、0.248%、0.921%和0.006%。结论广州市畜禽肉品中兽药残留问题依然严重。
Objective To investigate the main cumulated organs of hormone and antibiotics in livestock and poultry meat and the residual levels, and to evaluate the meal intakes per person per day. Methods The residual levels of oxytetracycline, tetracycline, chlortetracycline, chlormycetin, diethylstilbestrol and testosterone in the samples were detected by high performance liquid chromatography (HPLC). Results The detection rate of hormone residue was 28. 15%, and that of the antibiotics residue was 43.91%. There was no difference among the residual parts of hormone in the livestock and poultry body. But the residual levels of antibiotics in internal organs were significantly higher than those in the muscles. There were not statistically significant difference in the residual levels of hormone and antibiotics in pork ( including internal organs) and in poultry meat. The highest intakes of diethylstilbestrol, tetracycline, oxytetracycline and chlormycetin of inhabitants in Guangzhou were 0. 146%, 0. 248%, 0. 921%, and 0. 006% of the lowest cure amount, respectively. Conclusion It was still serious of the residual levels of veterinary drugs in livestock and poultry meat in Guangzhou city.
