淀粉与碘液的呈色作用 被引量:2

摘要 在探究“温度对酶活性的影响”实验中,理论上说经沸水处理的一组中,淀粉酶会失去活性,不能使淀粉水解,加入碘液后,应呈现蓝色。但是如果立即滴入碘液,仅在碘液滴加处呈少许的蓝色,稍加震荡,蓝色消失。试管冷却以后,又呈现为蓝色。为什么会出现这样的颜色变化呢?
