摘要
紫薯PPO分别以苯酚、儿茶酚、L-酪氨酸、焦性没食子酸和间苯三酚5种酚类物质为底物,反应体系在300~400nm范围内均有吸收峰,说明这5种物质都是紫薯PPO的作用底物。紫薯PPO对各酚类底物的亲合性依次为儿茶酚>焦性没食子酸>间苯三酚>苯酚>L-酪氨酸。
5 kinds of phenolic compounds are used as the substrates of polyphenol oxidase (PPO)extracted from fresh purple sweet potato for specificity study. The results show that the substrates of PPO include phenol, catechol, L-Lyr, pyrogallic acid and 1,3,5-hydroxybenzene, because there are absorption apexes within the range of 300-400 nm. The combining capability of the PPO with various substrates is in the order of catechol〉pyrogallic acid〉1,3,5-hydroxybenzene〉phenol〉L-tyrosine.
