摘要
本文综述了发酵生产单细胞油脂微生物的种类、真菌发酵生产单细胞油脂的主要成分、单细胞油脂重要的生理功能、真菌细胞内单细胞油脂的合成机理、影响真菌单细胞油脂生产的因素以及真菌单细胞油脂的提取和纯化。
The genera of fungi accumulating single cell oil, elements analysis of polyunsaturated fatty acids, physiological functions of single cell oil, metabolism principle of SCO synthesis in vivo, influencing factors during fugal fermentation, purification of single cell oil together with application prospects are reviewed.
