摘要
以低酯果胶(LMP)为研究对象,研究了钙离子浓度、果胶浓度、可溶性固形物(蔗糖)含量、pH值对低酯果胶形成凝胶的影响.采用正交试验得出凝胶形成的最佳组合条件:钙离子浓度0.06%,果胶浓度1.6%,可溶性固形物含量15%和pH值6.4.
The effects of calcium ion concentration, pectin concentration, soluble solids (sucrose) content and pH on the gelatin formation of low methoxyl pectin (LMP) were investigated by taking LMP as the research material. Then the optimal conditions of the gelatin formation of LMP are obtained by using the orthogonal experiment method: calcium ion concentration 0.06% , pectin concentration 1.6% , soluble solids content 15% and pH 6.4.
