摘要
讨论了膳食纤维国内外研究现状与发展趋势,植物中膳食纤维的定义、分类、物化性质、功能、改性方法及其在食品中的应用,并综述了膳食纤维的测定方法.
The research status and the development trend of dietary fiber at home and abroad are investigated, mainly including the definition, the classification, the physical and chemical properties, the function, the modification methods and the application of dietary fiber in food. The determination methods of dietary fiber are also reviewed.
