菊芋低聚果糖生产及前景展望 被引量:11

摘要 近年来,以现代新技术分离精制而成的低聚果糖,在国际上已被公认为具有较高的营养价值和保健作用。低聚果糖是功能性低聚糖,具有抗龋齿、调节肠道菌群、提高机体免疫力、降血压、降血脂及促进钙吸收的优良生理功能。本文综述了低聚果糖的生理功能和生物发酵法生产,同时阐述了国内外的研究现状及发展趋势。
