摘要
分析了栝楼籽仁的成分,测定了其油的酸价、皂化值和碘值。采用Schaal烘箱法,以过氧化值为指标,研究了BHA、BHT、VC、VE、VC棕榈酸酯、异VC和PG7种抗氧化剂在标准添加剂量下对栝楼籽油的抗氧化效果。结果表明:栝楼籽仁中粗脂肪含量高达51.30%,粗蛋白含量为32.89%,总糖、水分、灰分的含量分别为3.02%、7.64%和2.86%。酸价(KOH)、皂化值(KOH)和碘值(I2)分别为0.78 mg/g、201.97 mg/g和159.55 g/100 g。与不加抗氧化剂(CK)相比,7种抗氧化剂对栝楼籽油都有不同程度的抗氧化活性,其中BHA的抗氧化能力比其它6种抗氧化剂强的多。BHT的抗氧化能力略强于PG、VC、异VC、VE和VC棕榈酸酯。
Trchosanthes kiriowii Maxim seeds were used as material in component analysis and the seed oil was extracted; the acid value, saponification value and iodine value of the seed oil were analyzed. 7 kinds of antioxidant, including butylated hydroxyanisole (BHA), 2,6- di- tert- butyl- 4- methylphenol (BHT), L- ascorbic acid (VC), Vitamin E, L- ascorbic acid 6 - palmitate, isoascorbic acid and propyl gallate (PG), were added to the Trchosanthes kiriowii Maxim seed oil in standard dosage to study their antioxidation effects by using Schaal oven method, taking peroxide value as evaluation index. Results show that the seeds contain lipid 51.30%, protein 32.89%, total sugar 3.02% water 7.64% and ash 2.86%. The acid value (KOH), saponification value (KOH) and iodine value of Trchosanthes kiriowii Maxim seed oil are 0.78 rag/g, 201.97 mg/g and 159.55 g/100 g, respectively. Compared with the seed oil with no antioxidant added, all the seven antioxidants display antioxidation capacity to the oil. Among them, BHA displays much stronger antioxidation than the others and BHT is the second.
