摘要
探讨鳙鱼内脏的利用途径和价值,分析了鳙鱼内脏各部分的组成。其中内脏含有丰富的蛋白质和脂肪。鳙鱼内脏蛋白质中含有8种必需氨基酸且含量丰富,尤其肝脏和肠蛋白质中赖氨酸含量分别高达12.05g/100g蛋白质和25.51g/100g蛋白质。鳙鱼内脏中含脂肪组织17.52g/100g,鱼脂肪的碘值为105.21I2/100g。这些结果表明鳙鱼内脏具有较好的可利用前景。
In order to intensively probe their potential industrial and commercial utilizing ways and values. The chemical composition, protein content, amio acid compositions of protein, and content and properties of fat of the bighead carp (Aristichthys nobilis) guts were investigated. The results showed that protein and fat were rich in bighead carp guts. Protein from bighead carp guts possessed eight types of essential amino acid, and their content was high, especially content of lysine was respectively high up to 12.05 g/100 g protein for heptopancreas protein and 25.51 g/100 g protein for intestinal protein. The content of fat cells of bighead carp guts was high up to 17.52 g/100 g. The 12 value of fish oil was determined to be 105.21 I2/100 g. These results suggested that industrial and commercial utilizing potentiality was observed.
