摘要
甘薯中的花青素具有很强的抗氧化活性,很好的保健作用,且可作为天然色素应用于许多行业。论述了甘薯花青素的来源、分布、遗传特点,优良品种的优质栽培等以及花青素的提取和精制及其产业化开发现状,最后讨论了甘薯花青素开发前景和发展方向。
Sweetpotato anthocyanin has strong antioxidant activity and strong health function. It can be used in many industries as a natural colorant. The study discusses the origin, distribution, genetic character, high quality cultivation of varieties, extracting method and development situation of industrialization on anthocyanin. Finally, it discusses the development prospect and trend of sweet potato anthocyanin.
