摘要
从保鲜机理和效果的角度综述了壳聚糖在水果保鲜中的研究进展。指出由于壳聚糖具有来源广、食用安全等显著特点,随着应用研究的进一步深入,将对水果产业的发展起重要推动作用。
The author summarized the progress of the chitosan which applied in the fruit refreshing from the aspect of the mechanism and effect. Following the application and study become deeper and deeper, the article point out that the feature of chitosan will play a promoted role in the development of the fruit industry, based on the ehitosan widely distributed and it is edible.
