香猪、二花脸猪和大白猪肌纤维超微结构和肌肉组织化学特性的研究 被引量:5

摘要 电镜观察香猪、二花脸猪和大白猪肌纤维超微结构表明,肌原纤维直径、肌丝直径、肌节的长度和I带、A带的长度无明显的品种差异,肌纤维横截面单位面积内肌质网和肌原纤维所占的面积、肌质网终池、肌质和背最长肌中红肌纤维和白肌纤维的比例,肌原纤维间脂肪滴和糖原的含量、3个猪种间均有明显的差别。 The observation of the ultrastructure of the muscle fibers features revealed that diameter of myofibril, myofilament and sarcomere length, anisotropic band and isotropic band in Xiang pigs were similar to those in Er-Hua-lian pigs or White pigs; but the area of sarcoplasm and myofibril in unit cross-section of musele fibcrs was different among Xiang pigs, Er-Hua-lian pigs and White pigs. Both the proportion of red musele fiber to white muscle fiber in muscle longissimus and the contcnt of fat-bodics and hepatin granules between the myofibrils arc clearly different among these pig varieties.
