摘要
天然色素是色素发展方向,而功能性天然色素是发展的重点。文章综述了几种具有保健功能的食用天然色素:栀子黄色素、叶黄素、番茄红素、辣椒红色素、姜黄色素、虾青素等,主要从其保健功能和应用特性两方面进行了介绍,以促进色素工业进步。
Natural pigment is the direction of pigment development in food industry. Functional natural pigment is the focal point. The paper discusses some kinds of functional natural pigments such as, gardenia yellow, lutein, lycopene, capsanthin, curcumin, astaxanthin. It is described in the aspects of functionality and application research to boot pigment industry.
