摘要
在胶原溶胀液中加入壳聚糖,形成了胶原/壳聚糖复合溶胀液(1.5%质量分数,下同),考察了胶原与壳聚糖的质量比、剪切速率、温度等因素对复合溶胀液表观黏度的影响规律。实验结果表明,复合胶原溶胀液具有假塑性流体的特性。随着复合溶胀液中壳聚糖含量增多,体系pH值逐渐增大,向胶原溶胀液的等电点靠近,使分子逐渐卷曲,流体力学等价球变小,其表观黏度逐渐减小,对剪切应力的敏感性逐渐减小。另外,随着体系温度的升高,复合溶胀液的非牛顿指数值不断增大,其流动性趋于牛顿流体。
In our research, by adding chitosan into collagen dispersion, the composite dispersions of collagen/ chitosan were prepared with different quantity ratios of collagen to chitosan. Through measuring the apparent viscosities of the dispersions, the effects of factors on the apparent viscosity, such as quantity ratio of collagen to chitosan, shear rate and temperature, were investigated. The experimental results show that the composite collagen dispersion behaves pseudo-plastic fluid. And with increasing chitosan quantity in the composite dispersion the apparent viscosity of the composite dispersion gradually decreases, due to the reaction of carboxyl groups of collagen with the amino groups of chitosan, which causes the system pH value augmented, the molecules clew, hydrodynamically equivalent sphere decreases. When the temperature increasing, the Non-Newtonian index of composite dispersion is enhanced and its fluidity is inclined to Newtonian flow.
