介绍了壳聚糖的理化特性,综述了壳聚糖贮藏保鲜特性及其保鲜作用机理,总结了壳聚糖在果蔬保鲜中的应用。
The physicocbemical properties of chitosan were introduced, the storage and preservation of chitosan and its mechanism were reviewed, and the application of chitosan on the fruit and vegetable fresh-keeping was summerized.
