常温下低氧贮藏对松籽生理和品质的影响

Effects of Low O2 Storage on Physiology and Quality of Pine Nut at Ambient Temperature

摘要 以朝鲜红松为试材,将松籽置于O2含量分别为(2±1)%、(5±1)%、(10±1)%的密闭容器中,并以空气中贮藏的松籽为对照(CK),研究了常温下(20~30℃)贮藏180d期间松籽的生理和品质变化。试验结果表明:低氧贮藏的松籽的呼吸速率总体上显著低于对照,贮藏180d后对照的可溶性蛋白质、总脂肪和可溶性总糖含量明显低于所有低氧贮藏处理,因此低氧贮藏能较好地保持松籽的贮藏品质。2%低氧贮藏的松籽的失水量高于5%和10%低氧贮藏,不利于松籽种仁品质的保持。综上所述,在180d贮藏期内选择5%低氧贮藏的效果最佳。 The changes of physiology and quality of pine nut (Pinus koraiensis Sieb. et Zucc. ) Korea pine which were laid in air-tight container and treated with (2 ± 1 ) %, (5 ± 1 ) %, ( 10 ± 1 ) % 02 for 180 d at ambient-temperature(20 - 30 ℃)were studied and the pine nut stored in air was taken as control(CK). The results showed that low O2 storage was effective markedly to slow down respiratory rate as a whole, reduce the losses of soluble protein content, total fat content and soluble total sugars compared with CK after 180 d of storage, so low o2 storage was advantageous to their storage quality and quality grade. The quality of pine nut at 2% O2 storage was affected by loss of water which was more than that of pine nut stored at 5% and 10% O2. Over all, storage quality of the pine nut stored at 5% O2 was the best during 180 d storage.
