藏猪不同生长发育阶段胴体性能与肉质特性研究 被引量:10

摘要 选择出生1月龄左右藏猪54头,分别在1、2、3、4、5、6、12月龄时进行胴体性能和肉质特性测定,结果表明:随着月龄的增加腹油、背膘厚、皮厚、眼肌面积呈上升趋势;屠宰率在1-6月龄之间变化不大,而在12月龄时增加较多;瘦肉率、前后腿比例、前腿、背腰、后腿中瘦肉率均随月龄增加呈下降趋势。在肉质特性方面,从pH值、Ovto值、LF值、肌肉含水量、脂肪INF、滴水损失等数据来看,藏猪不同阶段肉质指标均属内质优。 The carcass traits and meat quality traits of 54 Tibetan pigs at 1,2 3,4,5,6,12 month old , respectively were measured to study the effect of the age on meat quality traits. The results showed that the kidney fat, back-fat thickness, skin thickness and loin eye area increased with age, but the slaughter rate change changed little during 1 to 6 months old and increased a lot at 12 month old, the lean meat percentage, anterior-ham-leg ratio, lean meat percentage of the anterior leg , back-waist part and ham decreased with age. For meat quality traits, the determination results of pH, Opto, LF value ,intramuscular water, fat and drop loss showed that the meat of Tibetan pigs in different growth and development phase reached the excellent level.
