摘要 [目的]寻求西瓜中番茄红素的最佳提取工艺。[方法]以新鲜成熟西瓜为材料,用不同有机溶剂提取其中的番茄红素,筛选最佳提取剂;在此基础上采用单因素试验研究提取温度、提取时间、料液比、pH值对番茄红素提取效果的影响,然后采用正交试验对该色素的提取工艺进行优化。[结果]乙酸乙酯为西瓜中番茄红素的最佳提取剂;各因素对番茄红素提取效果的影响由大到小依次为:提取温度>提取时间>料液比>pH值。[结论]番茄红素的优化提取工艺为:料液比1∶1,pH值4.0,提取温度30℃,提取时间1.5 h。 [ Objective ] The aim was to seek for the optimal extraction process of lycopene from watermelon. [ Method ] With fresh mature watermelon as the material, the lyeopene from it was extracted with different organic solvents and the optimal extractant was screened out. On the basis of it, the single factor test was taken to study the effects of extraction temperature, extraction time, solid-liquid ratio, pH value on extraction effect of lycopene. And then the extraction process of lycopene was optimized through orthogonal test. [ Result] Ethyl acetate was the optimal extractant for extracting lycopene from watermelon. The effects of 4 factors on extraction effect of lycopene in order was extraction temperature 〉 extraction time 〉 solid-liquid ratio 〉 pH value. [ Conclusion] The optimal extraction process of lycopene was that solid-liquid ratio of 1 : 1, pH value of 4.0, extraction temperature of 30 ℃ and extraction time of 1.5 h.
