摘要
对中国东北3个地区的原料奶中微生物污染情况进行调查与鉴定,主要检测原料奶中蜡样芽孢杆菌数,以及菌落总数和大肠菌群数,确定原料奶中微生物的污染状况与蜡样芽孢杆菌污染的关系。结果表明,3个地区的蜡样芽孢杆菌数平均值均≤10^5CFU/mL。而细菌总数平均值则为10^6-10^7CFU/mL,都属于超标奶。大肠菌群平均值,地区1为1349MPN/100mL。地区2为2574MPN/100mL,地区3为2032MPN/100mL。综合分析得出,蜡样芽孢杆菌数与原料奶的微生物污染状况无相关性。
The microbiology pollution of the raw milk was investigated and identified in three areas of northeast China. Bacillus cereus count in raw milk was detected, mainly, as the same time, aerobic bacterial count, coliform groups count were detected. Especially the relationship between Bacillus cereus count and microbiological contamination was determined. The results indicated that the microbial contamination condition in raw milk is unoptimistic. The Bacillus cereus count average values were bellow or equal to l0^5 CFU/mL in three areas. But all the total bacterial count average values exceeded the criterion, between 10^6 and 10^7 CFU/mL. In terms of the coliform groups average values, the first area were 1 349 MPN/100 mL, the second area were 2 574 MPN/100 mL , the third is 2 032 MPN/100 mL. So there were no relevance between Bacillus cereus count and microbiological contamination of the raw milk.
